Directions:

You will need to start by getting your oven preheating to 400°F.

Trim the tips from the wings. Season the two tablespoons of vegetable oil with salt and pepper in a large mixing bowl.

Toss the wings in the oil to coat evenly, then place skin-side up on a roasting pan and bake for half an hour. Remove the pan from the oven and set it aside to cool while preparing the bacon and assembling the sandwich bits.

In a little oil, fry the bacon for two or three minutes on each side, or until done.

It's not essential to cut the crusts from the bread, I simply think it makes for better presentation.

Lay the bacon on one slice of the bread.

Spoon half the tomato chutney onto the bacon and spread it out evenly.

Top the sandwich with the second piece of bread and quarter it by cutting two diagonal slices from corner to corner.

Assemble the chicken wings in the center of your serving plate and arrange the bacon and tomato pickle sandwich bites around them at regular intervals. Spoon a little tomato pickle into the gaps and finish off with the shredded basil leaves.
